Chicken Lettuce Wraps

Chicken lettuce wraps are crisp, flavorful and surprisingly filling. They are a great lighter dinner when you want something fresh but still high in protein.

Ingredients

  • 1 lb ground chicken
  • 1 head butter lettuce
  • 1 cup shredded carrots
  • 1/2 cup diced cucumber
  • 2 tbsp light peanut sauce
  • 1 tbsp soy sauce
  • 1 garlic clove
  • Fresh cilantro

Instructions

  1. Cook ground chicken with garlic until browned.
  2. Stir in soy sauce and a spoonful of peanut sauce.
  3. Wash and separate lettuce leaves.
  4. Fill leaves with chicken, carrots and cucumber.
  5. Drizzle with remaining sauce and cilantro.

Pro tips

  • Use romaine if butter lettuce is not available.
  • Serve with rice for a bigger meal.
  • Keep fillings separate for meal prep.
