Ingredients
- 1 lb ground chicken
- 1 head butter lettuce
- 1 cup shredded carrots
- 1/2 cup diced cucumber
- 2 tbsp light peanut sauce
- 1 tbsp soy sauce
- 1 garlic clove
- Fresh cilantro
Instructions
- Cook ground chicken with garlic until browned.
- Stir in soy sauce and a spoonful of peanut sauce.
- Wash and separate lettuce leaves.
- Fill leaves with chicken, carrots and cucumber.
- Drizzle with remaining sauce and cilantro.

- Use romaine if butter lettuce is not available.
