Buffalo Chicken Stuffed Sweet Potatoes

Buffalo chicken stuffed sweet potatoes are cozy, spicy and balanced. The sweet potato brings natural sweetness while the chicken adds plenty of protein and the yogurt drizzle keeps it cool.

Ingredients

  • 2 medium sweet potatoes
  • 2 cups cooked shredded chicken
  • 3 tbsp buffalo sauce
  • 1/4 cup Greek yogurt
  • 1 celery stalk, diced
  • 2 green onions
  • Salt and pepper

Instructions

  1. Microwave sweet potatoes until tender, about 7 to 9 minutes.
  2. Warm shredded chicken with buffalo sauce in a skillet.
  3. Split sweet potatoes and fluff the centers.
  4. Fill with buffalo chicken.
  5. Top with Greek yogurt, celery and green onions.

  • Rotisserie chicken makes this very fast.
  • Add a side salad for more volume.
