Creamy Salmon Spinach Pasta

Creamy salmon spinach pasta is rich enough to feel special but simple enough for a weeknight. Whole wheat pasta, tender salmon and a light lemony sauce make it satisfying without feeling too heavy.

Ingredients

  • 8 oz whole wheat pasta
  • 2 salmon fillets
  • 3 cups baby spinach
  • 1/2 cup light cream
  • 1/4 cup reserved pasta water
  • 1 lemon, zested and juiced
  • 2 garlic cloves
  • 1 tbsp olive oil
  • Salt and pepper

Instructions

  1. Cook pasta until al dente and reserve a little pasta water.
  2. Season salmon, then sear for 3 to 4 minutes per side.
  3. Saute garlic in the same pan, then add cream, lemon and pasta water.
  4. Stir in spinach until wilted, then add pasta.
  5. Flake salmon over the pasta and serve warm.

Pro tips

  • Greek yogurt can replace part of the cream.
  • Add peas for extra color.
  • Do not overcook the salmon; it should stay tender.
