Ingredients
- 8 oz whole wheat pasta
- 2 salmon fillets
- 3 cups baby spinach
- 1/2 cup light cream
- 1/4 cup reserved pasta water
- 1 lemon, zested and juiced
- 2 garlic cloves
- 1 tbsp olive oil
- Salt and pepper
Instructions
- Cook pasta until al dente and reserve a little pasta water.
- Season salmon, then sear for 3 to 4 minutes per side.
- Saute garlic in the same pan, then add cream, lemon and pasta water.
- Stir in spinach until wilted, then add pasta.
- Flake salmon over the pasta and serve warm.
