Ingredients

  • 2 Loup de Mer fillets (6-8 oz each), skin on or off

  • 1 tablespoon olive oil

  • 2 tablespoons butter

  • 2 cloves garlic, minced

  • ½ cup dry white wine

  • 2 tablespoons lemon juice

  • 2 tablespoons chopped fresh parsley

  • Salt and black pepper to taste

Instructions

  1. Pat the Loup de Mer fillets dry with paper towels. Season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Carefully place the fillets in the hot skillet, skin-side down if skin-on. Sear for 3-4 minutes until golden brown and crispy.
  4. Flip the fillets and cook for another 2-3 minutes, or until cooked through and flaky.
  5. Remove the fillets from the skillet and set aside.
  6. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  7. Pour in lemon juice and 2 tablespoons of chicken or vegetable broth, scraping up any browned bits from the bottom of the pan.
  8. Simmer the sauce for 2-3 minutes, or until slightly reduced and thickened.
  9. Stir in fresh parsley and a pinch of red pepper flakes (optional).
  10. Spoon the lemon-garlic sauce over the seared Loup de Mer fillets and serve immediately.
