Ingredients

  • 1 lb shrimp, peeled
  • 4 cups cauliflower rice
  • 1 cup snap peas
  • 1 bell pepper
  • 1 carrot, shredded
  • 2 garlic cloves
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • Lime juice

Instructions

  1. Pat shrimp dry and season lightly.
  2. Cook shrimp in a hot skillet for 2 minutes per side.
  3. Remove shrimp, then saute garlic and vegetables.
  4. Add cauliflower rice and soy sauce, cooking until tender.
  5. Return shrimp and finish with lime juice.
