Ingredients

  • 1 lb lean ground turkey
  • 1 bell pepper, diced
  • 1 cup black beans
  • 1 cup corn
  • 1/2 cup salsa
  • 1 tbsp taco seasoning
  • 1 avocado, sliced
  • Fresh cilantro
  • Salt to taste

Instructions

  1. Brown turkey in a large skillet, breaking it into small pieces.
  2. Add bell pepper and cook until slightly softened.
  3. Stir in black beans, corn, salsa and taco seasoning.
  4. Simmer for 5 minutes until the skillet is saucy and hot.
  5. Top with avocado and cilantro before serving.
