Ingredients

  • 2 lbs boneless, skinless chicken breasts (4-6)

  • 1 can (20 oz) pineapple chunks in juice, undrained

  • 1 cup barbecue sauce

  • ½ cup packed brown sugar

  • ¼ cup soy sauce

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon cornstarch

  • 2 tablespoons cold water

  • Optional: sesame seeds, green onions for garnish

Instructions

  1. Place chicken breasts in the crockpot.

  2. Combine pineapple (with juice), barbecue saucebrown sugarsoy sauce, and apple cider vinegar.

  3. Pour the sauce over the chicken.

  4. Cook on low 6-8 hrs or high 3-4 hrs.

  5. Shred chicken.

  6. Whisk cornstarch and water.

  7. Pour into crockpot.

  8. Cook on high 15-20 minutes, until thickened.
