Cowboy Corn Dip

Ingredients
  

  • 1 can sweet corn 15 ounces, drained
  • 1 can black beans 15 ounces, rinsed and drained
  • 1 cup diced red bell pepper
  • 1 cup diced green onion
  • 1 cup shredded cheddar cheese
  • 1 cup mayonnaise
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 jalapeño diced jalapeño optional
  • Tortilla chips for serving

Instructions
 

  • In a large mixing bowl, combine the sweet corn, black beans, diced red bell pepper, and diced green onion.
  • Add the shredded cheddar cheese to the bowl.
  • In a separate bowl, mix together the mayonnaise, chili powder, cumin, garlic powder, salt, and black pepper until well combined.
  • Pour the mayonnaise mixture over the corn and bean mixture, and stir until all ingredients are well coated.
  • If desired, fold in the diced jalapeño for added heat.
  • Cover the dip and refrigerate for at least 1 hour to allow the flavors to meld.
  • Serve chilled with tortilla chips.

Notes

For a spicier dip, add more jalapeño or include some hot sauce.
