CREAM CHEESE TORTILLA BITES

Ingredients
  

  • 4 large flour tortillas
  • 8 oz cream cheese softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions finely chopped
  • 1/4 cup red bell pepper diced
  • 1/4 cup cucumbers diced
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt to taste
  • pepper to taste
  • fresh parsley or cilantro for garnish

Instructions
 

  • In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until well blended.
  • Spread an even layer of the cream cheese mixture onto each flour tortilla, leaving a small border around the edges.
  • Sprinkle the chopped green onions, diced red bell pepper, and diced cucumbers evenly over the cream cheese layer on each tortilla.
  • Starting from one edge, carefully roll up each tortilla tightly. Repeat with all tortillas.
  • Once rolled, wrap each tortilla in plastic wrap and refrigerate for at least 30 minutes to firm up.
  • After chilling, remove the tortillas from the refrigerator and unwrap them. Using a sharp knife, slice each roll into bite-sized pieces.
  • Arrange the tortilla bites on a serving platter and garnish with fresh parsley or cilantro before serving.

Notes

These bites can be made ahead of time and stored in the refrigerator until ready to serve.
