Ingredients
  

  • 1 cup cottage cheese full-fat or low-fat
  • 2 large eggs
  • 0.5 cup almond flour or oat flour
  • 0.5 tsp garlic powder
  • 0.25 tsp salt
  • Italian seasoning optional

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a blender or food processor, combine cottage cheese, eggs, almond flour, garlic powder, and salt. Blend until smooth.
  • Pour the batter onto the prepared baking sheet. Spread it evenly into a thin, round, or rectangular shape (about 1/4 inch thick).
  • Bake for 20-25 minutes, or until the flatbread is golden brown and set. Watch carefully to prevent burning!
  • Let the flatbread cool on the baking sheet for a few minutes before transferring it to a wire rack. Slice and serve warm or at room temperature.
