Ingredients
  

Oreo Crust

  • 24 Oreo cookies crushed
  • 6 tablespoons unsalted butter melted

Red Velvet Cheesecake Filling

  • 32 ounces cream cheese softened
  • 1 1/2 cups granulated sugar
  • 1 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons red food coloring
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 12 Oreo cookies coarsely chopped, for swirl

Garnish (Optional)

  • Whipped cream
  • Oreo cookie crumbs
  • Red velvet cake crumbs

Instructions
 

  • Oreo Crust: Crush Oreos, mix with melted butter, press into springform pan, and pre-bake.
  • Red Velvet Filling: Beat cream cheese, sugar, and sour cream. Add eggs, vanilla, red food coloring, cocoa, and salt. Fold in chopped Oreos.
  • Pour filling over crust and bake at 325°F (160°C) for 60-70 minutes. Cool in oven and then at room temperature.
  • Chill in refrigerator for at least 4 hours. Garnish with whipped cream and Oreo crumbs before serving.

Notes

For best results, use room temperature ingredients and chill thoroughly. Consider a water bath for an even creamier texture!
