Ingredients
  

Pistachio Cake

  • 1 box Pistachio Pudding Cake Mix (15.25 oz)
  • 1 can Crushed Pineapple undrained (20 oz)
  • 1/2 cup Vegetable Oil
  • 4 Large Eggs
  • 1/2 cup Chopped Pistachios

Tropical Cream Cheese Frosting

  • 8 oz Cream Cheese softened
  • 1/2 cup Unsalted Butter softened
  • 4 cups Powdered Sugar
  • 2 tablespoons Milk
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Lime Zest
  • 1/2 cup Toasted Coconut Flakes

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • Combine cake mix, undrained pineapple, oil, and eggs in a large bowl. Beat until well combined. Stir in pistachios.
  • Pour batter into prepared pan and spread evenly.
  • Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool completely in the pan before frosting.
  • Beat cream cheese and butter until smooth. Gradually add powdered sugar, beating until fluffy. Beat in milk, vanilla, and lime zest.
  • Spread frosting evenly over the cooled cake. Sprinkle with toasted coconut flakes.
  • Refrigerate for at least 30 minutes before serving.
