Ingredients
  

  • 4 large flour tortillas
  • 8 ounces cream cheese softened
  • 1 cup shredded carrots
  • 1 cup cucumber thinly sliced
  • 1 cup red bell pepper thinly sliced
  • 1 cup spinach leaves
  • 1/2 cup red onion thinly sliced
  • 1/2 teaspoon garlic powder
  • salt to taste
  • pepper to taste
  • fresh herbs like dill or parsley for garnish

Instructions
 

  • In a mixing bowl, combine the softened cream cheese, garlic powder, salt, and pepper until smooth and well blended.
  • Spread a generous layer of the cream cheese mixture evenly over each tortilla.
  • Layer the shredded carrots, cucumber slices, red bell pepper slices, spinach leaves, and red onion evenly over the cream cheese on each tortilla.
  • Begin rolling the tortilla tightly from one end to the other, ensuring all the fillings stay inside.
  • Once rolled, wrap each tortilla in plastic wrap and refrigerate for at least 30 minutes to set.
  • After chilling, remove the plastic wrap and slice each tortilla roll into 1-inch pieces.
  • Arrange the roll ups on a serving platter and garnish with fresh herbs before serving.

Notes

These roll ups can be made ahead of time and stored in the refrigerator for a quick snack or appetizer.
