Instructions
In a mixing bowl, combine the softened cream cheese, garlic powder, salt, and pepper until smooth and well blended.
Spread a generous layer of the cream cheese mixture evenly over each tortilla.
Layer the shredded carrots, cucumber slices, red bell pepper slices, spinach leaves, and red onion evenly over the cream cheese on each tortilla.
Begin rolling the tortilla tightly from one end to the other, ensuring all the fillings stay inside.
Once rolled, wrap each tortilla in plastic wrap and refrigerate for at least 30 minutes to set.
After chilling, remove the plastic wrap and slice each tortilla roll into 1-inch pieces.
Arrange the roll ups on a serving platter and garnish with fresh herbs before serving.
Notes
These roll ups can be made ahead of time and stored in the refrigerator for a quick snack or appetizer.
